Sweet and Simple Chicken and Rice Recipe





Here are two versions of the Sweet and Simple Chicken and Rice Recipe- One is a fast and easy version, one is the version pictured above (Gluten free)

 Sweet and Simple Chicken and Rice

Sweet Sauce: 
1 and 1/4 cup of Sugar
1/2 cup of Ketchup
1/2 cup of Water
2 TBL of soy Sauce

Mix all of the ingredients together in a pot until sugar is dissolved on medium high heat, bring to a boil, turn heat down to medium. Let the sauce cook uncovered for about 3 minutes. Remove from heat. 

This Sauce can be served warm or cold. We often make a double batch and store it in mason jars in our refrigerator. 

To finish up this recipe we make the desired amount of rice we want. For the chicken we heat up some  popcorn chicken in our convection toaster. Popcorn chicken can be found at most grocery stores in the freezer section. They are kind of nicer version of chicken nuggets! 

Place the rice on a plate, top with the popcorn chicken and pour some of the sweet sauce on top! We also add duck sauce and soy sauce.

This recipe was kind of made up at the last minute to accommodate our friend who was gluten intolerant.
The major difference was making our own un-breaded chicken.  

Sweet Sauce:

Take 2 large chicken breasts and cute into cube shapes. Toss into an oiled pan. We basically pan fried them until they were cooked. 

My husband sauteed green onion, orange and yellow peppers, broccoli and sliced garlic with a bit of salt until they were cooked through- this was kind of a last minute thing and not exactly by a recipe. To finish up this meal Justin made enough rice for four people. Everyone scooped out what they wanted on their plates and poured the Sweet sauce on top.

NY Trip- Bonus!!



So while we were in NY visiting Katy and Jason, Katy kept commenting that she was not feeling all that great. 

On Saturday afternoon we were just chilling in the living room when Katy called me from her bathroom, I went over thinking something was wrong and she needed my help- as her voice was very excited. She handed me a pregnancy test- it was positive. 

"You're pregnant?!" I asked.
"YES!!!"

I went to give her a hug and Katy was laughing and crying and bouncing all over the place. She reminded me of Tigger! 

"We need to think up of a way to tell Jason! I want to do something really nice!" Katy told me. 

I suggested we rush upstairs and hop onto her laptop and search Pinterest for ideas. We headed up as nonchalantly as we could manage so as not to arouse suspicion from our husbands.

Once we got the laptop booted up and launched the internet browser we quickly ran into a problem- Pinterest wouldn't open! So we gave up and started brainstorming for ideas. 

We soon came to an adorable idea! We would create a video! I took a few photos of Katy and Elijah holding the positive pregnancy test. 

 

The video we made was under the guise of being a slideshow of Elijah's pictures from birth to his first birthday. Elijah would be turning one in a few days. It was perfect! At the end of the slideshow we added a picture of Elijah smiling with the caption "Daddy Guess What?!!!"  and then the positive pregnancy test photos would be shown.

We ran downstairs once the video was all set and saved. 
"Jason we made a video of Elijah- would you please watch it?" Katy asked.
"Oh, but I was going to take a nap! Could it wait an hour?" Jason answered.
No! This could not! 

Katy was able to talk Jason into waiting to take his nap for "just three minutes" to watch the video.

NY Trip 2013


Our trip out to NY to visit Katy and Jason's family started on a Thursday, Justin and I packed up and hopped in the car and finally arrived a little after 11pm. After chatting and catching up way past midnight we all went to sleep! 

On Friday Justin and I hung out with Katy and little Elijah till Jason returned home from work. Elijah's 1st birthday was coming fast, and we brought him a little gift!

At the Katy's parent's home. I helped Katy make a little slideshow to surprise her family with the news about her 2nd child being on the way!

 There was a lot of squealing and joy after they figured it out.

On Sunday morning we attended church with Katy and Jason. The church they attend was originally built in 1889 and had several gorgeous stained-glass windows. 

I do not know if these windows are original to when the church was built in 1889, but they were still very gorgeous! 


Look at those vibrant colors! 

I should add that the windows were huge too! 

In really loved these Calla Lillies in the stained glass. 

 Katy is a pianist for the church, once she started practicing before service,
Elijah started "singing", it was so cute!!

I cannot express how much of a blessing Katy's friendship is to me!!

 Later on in the afternoon we drove to Jason's family's home. We saw some more of the beautiful buildings and farms.

That evening Justin made us Orange Chicken and rice with veggies. It was DELICIOUS!


On Tuesday morning we started to pack up and prepare to leave.
After hugs and goodbyes, we got in the car and began the long journey home.

I should add that it rained the entire trip home!

 I am not sure what town we were in, but the buildings looked cool.




I am so thankful that we made the trip out to see Katy, Jason and their family. It was a blessing to my heart! We are hoping to be able to visit again next year!
